Sorry I was MIA all day. It ended up being a really busy day. This afternoon I did one of my favorite things… BAKE COOKIES!
I used the basic Tollhouse recipe, but substituted the chocolate chips for white chocolate chips and m&m’s. I only used the red and the blue ones to make them Fourth of July festive!
No worries, I’m sure the rest of the colors will get used eventually
I guess I didn’t realize this recipe made 60 cookies… or that I should put them a little farther apart on the cookie sheet. Whoops! Can you tell it has been a while?
I made these to bring to Caitlin’s Fourth of July party tomorrow, and hopefully she has some hungry guests!
By the time I got around to lunch, it was 2 o’clock. Since the oven was already pre-heated, we popped in a Kashi pizza.
I liked this better than some of the other flavors of Kashi pizzas. I think it had slightly more veggies and the variety was good.
Of course, it never looks as good as the picture on the box- but it was pretty close!
We took advantage of Jason’s day off and went to see the Hangover after lunch If you haven’t seen it, I would recommend it! Especially if you like movies like Wedding Crashers or 40-year Old virgin. I was literally laughing out loud (which says a lot!)
Once we got back, I munched on two cookies… YUMM! Don’t worry, they aren’t all this weird looking. I saved the prettiest looking ones for the Par-tay.
I pretty much bummed around the apartment all afternoon, did some laundry, cleaned the kitchen, blah, blah, boring.
On to dinner! I was actually pretty impressed with how this meal turned out since I pretty much just started throwing things together. Here’s the recipe…
Lime Cilantro Shrimp with Feta Couscous (serves 2)
Ingredients:
- 1/2 cup dry couscous
- 3/4 cup vegetable broth
- 1/4 cup crumbled feta
- 1 TBL lime juice
- cilantro
- 6 oz. shrimp
- Broccoli (or whatever veggie you want)
This is the vegetable broth I used. It came in a four pack which is perfect for recipes. You can substitute this for water but I think this gives it more flavor!
Directions:
- Bring the vegetable broth and lime juice to a boil.
- Add in cous-cous and stir.
- Cover pot and remove from heat.
- Let stand for 5 minutes.
- Add crumbled feta to the cous cous and stir.
- In the meantime, use the rest of the broth in a pan to cook the shrimp.
- Add sprinkle of cilantro onto the shrimp.
- Serve with veggies, and enjoy!

After our lovely dinner I got a great idea to wash my car! We thought of taking a walk but it seemed to hot. At least this way we had some water to cool down with.
Our stupid apartment complex covered and locked all the hose hook ups so we had to be ghetto and use the dog wash. LOL.
The hose was ridiculously short and I had to move the car twice just to get it all rinsed. Oh well, it worked! And, it only cost me 75 cents as opposed to 1.50 at the gas station. The lengths I go to for mere pocket change.
Whew! Now I’m off to prep my bike for tomorrow! I’m going for a 20 mile ride with Ashley… GAH! I’m so nervous- it’s only my second ride on my road bike!!!
Any last minute bike tips? What should I eat before? Should I bring my sport beans? HELP!!

The Hangover is HILARIOUS! My favorite part has to be the end though with the pics! Holy crap, how did they come up with these things??

Great festive cookies! I would definitely be munching on the other colored m&ms!! No advice on the bike ride except to have a great time and go ahead and bring your sport beans! It never hurts to be over prepared!

haha, I love that you used the dog wash to wash your CAR because I use the car wash at my complex (don't worry, it's not the pressurized kind) to wash my DOG!
