Black Bean Burgers

All day at school yesterday, I had a craving for black bean burgers and sweet potato fries!

When I got home, dinner was an easy choice:

I combined these ingredients into a bowl:

  • 2 cups of black beans
  • 1/2 cup wild rice
  • 1/2 cup Italian bread crumps
  • 1/2 onion
  • equal amount broccoli
  • 1 egg
  • Garlic salt
  • paprika

I mashed it all together, and pulsed a few times in the blender. I then shaped them into 8 individual patties. Each one went on the skillet for about 1-2 minutes per side.

I also made sweet potato fries by cutting a fresh sweet potato into fry form, and baking in the oven for 30 mins on 400 degrees. I then put them under the broiler for crisping!

The rest of my eats were on campus finds. I stopped at subway for lunch, and picked up a Turkey and swiss sandwich on honey oat bread, with all the veggies.

Afternoon snacks included:

 

Cranberry Apple Cherry Clif bar

…and a fuji apple!

Oh yes, I had a handful of m&ms for dessert. A big handful. ;)

 

I prefer making my own meals at home, but sometimes I run out of time. Life is busy!

 

I’m off to start my newest form of exercise! Can you guess what it is? :D

  2. Oh man! I’ve been thinking about making black bean burgers for a week! Thanks for the recipe! You have a SUBWAY on your campus! I’m jealous. My campus has a Wendy’s (ew) and a Zepps but the sandwiches are really bad. We also have an Au Bon Pain though so I really can’t complain.
